Quick fixed salmon

Cooking is not one of my best features but I’m getting better. My worst thing is lunch. Often I just think it’s a waste of time. When I work I want to work. When I work from home which I do a lot at the moment it’s annoying to leave my house or to take the time to really cook. But I need a proper meal during the day so this it what I do and it only takes a couple of minutes.
First we try to cook extra pasta and rice so there always are some in the fridge. This is handy during the day or when the kids are chewing on the chairs of hunger and dinner needs to be served pronto. But I also like to reduce the carbs a bit during the day since we eat alot of it in all the other meals.
I take a piece of salmon (mostly frozen) then I put it in the microwave a couple of minutes. Yeah some of you will wince right now just as I did in the beginning but the microwave actually got me cooking! In the meanwhile I do a marinade of Soy, ginger, garlic, rice vinegar, basil, salt, pepper and some honey. When the salmon is defrosted I pour the marinade around it and back in the microwave until the salmon is done. You can also just fry it or put it in a grill pan. When it’s done I serve it with avocado, cottage cheese and cherry tomatoes. You can save some of the marinade as sauce or use créme de basilic with it.

It’s so easy and taste great and it’s made faster than you can say McDonalds!
